Ingredients

2 tablespoons creole seasoning
2 medium onions , sliced into 1/4-inch slices
2 tablespoons olive oil
8 hot Italian sausages ( pork or turkey )
3/4 cup water
1 can tomato puree
2 tablespoons fresh parsley , chopped
1/2 teaspoon kosher salt
3 cups water
1 teaspoon kosher salt
3/4 cup yellow cornmeal
1/2 cup cream cheese
1/3 cup parmesan cheese , plus additional
parmesan cheese , for garnish
1 tablespoon unsalted butter ( can use , but omit the 1 Tbsp . salt )

Instructions

1.In a small bowl, mix together the creole seasoning and set aside.
2.Over medium-high heat, heat 2 tablespoons of olive oil in a skillet.
3.Add the sliced onions and 1/2 teaspoon of kosher salt and cook until the onions are slightly softened.
4.Remove the onions from the skillet and set aside.
5.Add the hot Italian sausages to the same skillet and sprinkle with the creole seasoning mix.
6.Cook the sausages until they are browned on all sides and cooked through.
7.Add the cooked onions back to the skillet along with 3/4 cup of water and 1 can of tomato puree.
8.Stir in the chopped fresh parsley and let the mixture simmer for 10 to 15 minutes until the sauce is thickened.
9.While the sausage and onion mixture is simmering, combine 3 cups of water and 1 teaspoon of kosher salt in a saucepan and bring to a boil.
10.Slowly whisk in the yellow cornmeal and cook over low heat until the mixture thickens.
11.Remove the polenta from the heat and stir in the cream cheese, parmesan cheese, and unsalted butter until well combined.
12.To serve, spoon the creamy polenta onto a plate and top with the spicy Italian sausage and chili-rubbed onions.
13.Garnish with additional parmesan cheese, if desired.
