Ingredients

3 small japanese or italian eggplants ( about 12 ounces )
2 tablespoons canola oil
1/2 medium yellow onion , finely chopped ( about 1 cup , not packed )
1 small tomatoes , finely chopped ( about 1/4 cup )
2 garlic cloves , minced
1 teaspoon ground cayenne pepper
1/2 teaspoon coriander seed , finely ground
1/4 teaspoon cumin seed , finely ground
1/4 teaspoon ground turmeric
2 small green serrano chilies , cut lengthwise in half
3/4 teaspoon salt
1 lb shrimp , small or medium , peeled and deveined , tails off
1 cup coconut milk
1/2 cup water
1 1/2 tablespoons apple cider vinegar

Instructions
