1 onion , chopped
60 g spanish salami , chopped
1/2 cup tomato puree
2 sheets puff pastry
1 tomatoes , peeled & chopped
1/2 small red pepper , finely chopped
1 egg , lightly beaten

Instructions

1.Preheat your oven to 200°C. Line a baking tray with parchment paper.
2.Saute onion, red pepper, and Spanish salami together in a saucepan over medium heat.
3.Add chopped tomatoes and tomato puree. Cook for 10 minutes, stirring occasionally.
4.Let the mixture cool down for 5 minutes.
5.Cut each puff pastry sheet into 9 squares.
6.Add a spoonful of filling onto one half of each square and fold the other half over to seal them.
7.Crimp the edges with a fork to secure.
8.Brush each empanadilla with egg wash.
9.Bake in the preheated oven for 15-20 minutes or until golden brown.
