Ingredients

5 fresh red chile peppers
1 small onion
1/2 tomato
2 cloves garlic
5 tablespoons vegetable oil , divided
2 long eggplants , sliced into 1 1/2-inch pieces
1 tablespoon white sugar
1 teaspoon salt
Spicy Eggplant (Terong Balado) is a traditional Indonesian dish that is popular in Sumatra. Instructions

1.Blend the chile peppers, onion, tomato, and garlic together until they form a paste.
2.Heat 3 tablespoons of vegetable oil in a skillet or wok over medium heat. Add the eggplant and fry until browned and slightly softened.
3.Remove the eggplant from the skillet and set aside.
4.Add the remaining 2 tablespoons of vegetable oil to the skillet, followed by the blended paste. Cook for 5-6 minutes, stirring occasionally.
5.Add the sugar and salt to the mixture and stir until well combined.
6.Return the eggplant to the skillet and mix well with the spice paste, making sure all the eggplant is coated. Cook for another 2-3 minutes and remove from heat.
