Ingredients

2 onions , chopped

1 cup parsley , chopped ( about 1 bunch )
1 1/2 cups chicken stock
7 cups cornbread , cubed & lightly toasted ( this is about 24oz of cornbread )
6 ounces queso fresco , lightly crumbled
