Ingredients

1 can chicken breasts , strained and shredded
2 cans tomatoes and green chilies ( I prefer Rotel )
2 cups monterey jack cheese , shredded
1/4 cup green onion , sliced
8 flour tortillas ( burrito size )

Instructions

1.In a large bowl, combine the chicken, tomatoes and green chilies, and half of the shredded cheese.
2.Lay out the tortillas and place 1/2 cup of the chicken mixture on half of each tortilla.
3.Sprinkle green onions on top of the chicken mixture.
4.Fold the tortillas in half and cook quesadillas on a flat pan over medium heat.
5.Cook each quesadilla until cheese is melted and tortilla is crispy, which should only take a few minutes. Cut into wedges.
