Instructions

1.Preheat oven to 425°F.
2.Toss chicken with 1 tablespoon olive oil, chili powder, cumin, garlic powder, salt, and black pepper. Place on a baking sheet and bake for 20 minutes or until cooked through.
3.Heat remaining olive oil in a skillet over medium-high heat. Add onion and bell pepper and cook until softened, about 5 minutes.
4.Add cooked chicken to skillet and toss to combine.
5.Place tortillas on a baking sheet and top each with chicken mixture and shredded cheese. Place another tortilla on top and press down slightly.
