2 cooked chicken breasts , shredded
4 cups chicken stock
1 zucchini , peeled and julienned into long noodle like strands
2 bunches baby bok choy ( about 3 cups ) or 2 bunches kale , cut into thin strips ( about 3 cups )
1/2 cup smooth cashew butter
1 cup hot water
chopped cashews and red pepper flakes

Instructions

1.In a large pot, heat the olive oil and sesame oil over medium-high heat.

3.Add the mushrooms and cook for an additional 3-4 minutes until they begin to release their juices.
4.Add the shredded chicken and chicken stock and bring to a boil.
5.Add the julienned zucchini noodles and baby bok choy or kale and simmer for 10 minutes.
6.In a small bowl, whisk together the cashew butter and hot water until smooth.
7.Add the cashew butter mixture to the soup and stir until well combined.
