1 slice fresh ginger , finely chopped
1 teaspoon chile powder
1 cup water , or as needed
1 bunch garlic scapes , cut into 1-inch pieces
1 teaspoon soy sauce
salt to taste
1 teaspoon water
1 teaspoon cornstarch
1/2 teaspoon ground Sichuan peppercorns , or to taste

Instructions

1.In a wok or large pan, heat the vegetable oil over medium-high heat.

4.Add enough water to almost cover the tofu (about 1 cup) and bring to a boil.
5.Reduce the heat to low and add the garlic scapes, soy sauce, and salt to taste.
6.Simmer the tofu for 10-15 minutes, until the garlic scapes are tender and the sauce has thickened slightly.
7.In a small bowl, mix together the 1 teaspoon water and cornstarch.
8.Pour the cornstarch mixture into the wok and stir until the sauce has thickened and the tofu is coated.
9.Sprinkle the ground Sichuan peppercorns over the top and serve hot over rice.
