Bean Cakes :
2 tablespoons olive oil , divided

2 cans black beans , drained and rinsed
salt and black pepper to taste
2 cups grated raw sweet potato
1 egg , lightly beaten
1/2 cup plain dried bread crumbs

Instructions

1.In a small bowl, whisk together the sour cream, lime juice, jalapeno pepper, and salt. Cover and chill until serving time.

6.In the skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat. Add the patties and cook for 3 to 4 minutes per side, until golden brown and cooked through. Serve with the lime sour cream on top.
