Ingredients

6 tablespoons olive oil
2 tablespoons annatto seeds
2 lbs top round beef , cut into large cubes
1 large onion , finely chopped
6 cloves garlic , finely chopped
1 tablespoon salt
2 tablespoons brown sugar
1 tablespoon curry powder
1 cup beer ( optional )
1 stalk lemongrass , finely chopped
2 pieces star anise
1 cinnamon stick
1 cup thickly chopped carrot
1 cup mint leaves or 1 cup basil leaves
2 red chilies , sliced

Spicy Beef Stew, also known as Bo Kho, is a popular Vietnamese dish that is perfect for the colder months. Traditionally, it's a spicy and aromatic stew made using different beef cuts and served with Vietnamese baguette, crusty bread or rice. Tender beef, earthy lemongrass, warming spices, and veggies simmer low and slow in a rich and flavorful broth. In Vietnam, it's commonly consumed for breakfast or lunch, but you can enjoy this dish any time of day.

Instructions

1.In a frying pan, heat 4 tablespoons of olive oil over medium heat.
2.Add the annatto seeds and fry them until the oil has turned a beautiful orange color. Remove the seeds from the oil and discard them.
3.In the same pan, fry the pieces of beef until browned on all sides. Set aside.
4.In a large pot/saucepan, heat the remaining 2 tablespoons of olive oil over medium heat.
5.Add the chopped onion and garlic and sauté until fragrant and translucent.
6.Return the beef to the pot and add salt, brown sugar, curry powder, and beer (if using).
7.Add lemongrass, star anise, cinnamon stick, and enough water to cover the beef.
8.Bring the mixture to a boil, then reduce the heat to low and let simmer for 1 hour until the beef is tender.
9.Add the carrot and let the stew cook over low heat for an additional 30 minutes.
10.Remove the star anise and cinnamon stick.
11.Serve the stew hot with a sprinkle of mint/basil leaves, sliced red chilies, salt, pepper, and a squeeze of lime juice on top.
