5 shallots , finely chopped
5 garlic cloves
2 -3 red chili peppers , seeded and finely chopped
1 red bell pepper , finely chopped
1 tablespoon ground cumin
1/2 tablespoon chili powder
1 teaspoon cayenne pepper
1 tablespoon all-purpose flour
2 1/2 ounces concentrated tomato paste
5 tablespoons tomato ketchup
1 tablespoon Worcestershire sauce
1 tablespoon white wine vinegar
1/2 tablespoon habanero sauce
1/2 lemon , squeezed
3 large hardboiled egg , finely chopped
1/4 cup jalapeno pepper , finely chopped
1 cup cilantro , chopped
salt and pepper
8 sheets puff pastry
2 eggs , beaten ( for glaze )

Instructions

1.Preheat oven to 400°F.
2.Heat cooking oil in a large skillet over medium-high heat. Add ground beef, shallots, garlic, red chili peppers, and red bell pepper. Cook until the beef is browned and the vegetables are softened, about 10 minutes.
3.Add cumin, chili powder, cayenne pepper, and flour, and stir to combine. Cook for an additional 2-3 minutes.
4.Add tomato paste, tomato ketchup, Worcestershire sauce, white wine vinegar, habanero sauce, and lemon juice and stir to combine. Cook for another 5 minutes to allow flavors to develop.
5.Add chopped hard-boiled eggs, jalapeno pepper, cilantro, salt, and pepper, and mix well.
6.Roll out puff pastry sheets and cut them into circles using a cookie cutter or by tracing around a small saucer. Place a spoonful of the beef mixture onto one half of each circle. Moisten the edges with water, and then fold the dough over the filling. Crimp the edges together with a fork to seal.
7.Brush the beaten egg over the empanadas and sprinkle with salt.
8.Place the empanadas on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown.
