Ingredients

1 large aubergine , chopped into 2-inch dice
1 large red pepper , de-seeded with the white membrane cut out & chopped into 2-inch dice
6 garlic cloves , peeled
4 tomatoes , roughly chopped
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon chili powder
salt & pepper
2 sprigs fresh coriander ( Cilantro )
1 teaspoon harissa ( optional )
4 sun-dried tomatoes packed in oil , drained ( reserve 1 tablespoon of the sun-dried oil or olive oil )
The Spicy Aubergine (Eggplant) and Red Pepper Tapenade - Dip is a healthy and flavorful dip that is perfect for parties or as a healthy snack. Instructions

1.Preheat the oven to 200C (180C fan oven) mark 6.
2.In a large mixing bowl, combine the chopped aubergine, red pepper, garlic, tomatoes, 1 tablespoon of olive oil, cumin, coriander, and chili powder. Mix to combine and season with salt & pepper.
3.Transfer the mixture to a large baking dish and bake for 35-40 minutes until the vegetables are tender and golden.
4.Once cooked, remove from the oven and allow to cool slightly.
5.Add the cooked vegetables to a food processor along with the fresh coriander, harissa (optional), sun-dried tomatoes, and reserved oil. Pulse until the mixture is smooth.
6.Transfer the dip to a serving bowl and garnish with fresh coriander and extra harissa (if desired).
7.Serve with a selection of fresh vegetables, pita bread, or tortilla chips.
