25 limes
1 cup coarse salt ( koshering salt , 250 ml )
4 tablespoons mustard powder
1 tablespoon hot pepper flakes
1 tablespoon turmeric
1 tablespoon fennel seed , crushed
2 tablespoons coriander seeds , crushed
3 ounces mustard seeds , yellow
2 1/2 cups sunflower oil

Instructions

1.Cut the top and bottom off of the limes and then cut into quarters, but not all the way through the base
2.Combine the salt, mustard powder, hot pepper flakes, turmeric, fennel seeds, coriander seeds, and yellow mustard seeds and mix well.
3.Press the salt mixture into each of the lime quarters and place them into a clean sterilized glass jar.
4.Pour the sunflower oil over the limes into the jar, filling it to about 2 inches below the brim. Screw the lid onto the jar and let it sit in the fridge for at least 3 weeks.
5.Once opened, use within 6 months.
