4 cups water or 4 cups vegetable broth
1 1/4 cups red lentils , rinsed
3 large plum tomatoes , cored , seeded , chopped ( about 1 pound )
1/2 cup fresh cilantro leaves
2 tablespoons unsalted butter
salt & freshly ground black pepper

Instructions

1.In a small bowl, combine the ground coriander, ground cumin, ground cinnamon, ground turmeric, and red pepper flakes.
2.Heat the vegetable oil in a large saucepan over medium heat. Add the finely chopped onion and minced garlic cloves, and cook until the onion has softened, about 5 minutes.
3.Add the grated fresh ginger and spice mixture to the pan, stirring to combine.
4.Add the vegetable broth or water, rinsed red lentils, and chopped plum tomatoes to the pan, stirring to combine.
5.Bring the mixture to a boil, then reduce the heat to low and let simmer for 20-25 minutes, or until the lentils are tender and the sauce has thickened.
6.Remove the pan from heat and stir in the fresh cilantro leaves and unsalted butter. Season with salt and pepper to taste.
