The warm and spicy beef pairs perfectly with the fluffy and savory Yorkshire pudding, and the tangy mustard dressing adds a flavorful finishing touch. Yorkshire pudding is a traditional English dish that is similar to a popover, and it is often served with roast beef. This recipe puts a modern twist on the classic dish by making mini Yorkshire puddings that are perfect for sharing.

Instructions

1.Preheat the oven to 400°F. In a small bowl, combine the black pepper, coriander, allspice, and olive oil to form a paste. Rub the paste onto the beef tenderloin.
2.Place the beef on a baking sheet and roast for 20-25 minutes, or until the temperature of the meat reaches 135°F for medium-rare. Remove the beef from the oven and let it rest for 5 minutes.
3.In a small bowl, whisk together the reserved sun-dried tomato oil, coarse grain mustard, and chopped sun-dried tomatoes.
4.To make the Yorkshire pudding batter, whisk together the flour and salt in a medium bowl. In a separate bowl, whisk together the eggs, milk, and water. Gradually add the wet ingredients to the dry ingredients, whisking until the batter is smooth.
5.Preheat a non-stick mini muffin pan in the oven for 5 minutes. Remove the pan from the oven and fill each cup with batter.
6.Bake the Yorkshire puddings for 15-20 minutes, or until golden brown and puffy.
7.Slice the beef into thin pieces and serve with the Yorkshire puddings, drizzled with the mustard dressing.
