Spiced Plum Chutney is a popular condiment in India, where it is called 'Aloo Bukhara Chutney' and served with samosas, pakoras, and other snacks. It is also a staple in many British households, where it is enjoyed as a topping for cheese and crackers or as a side dish for roast meats. The chutney is made by combining fresh plums, apples, onions, garlic, and spices with vinegar and sugar. The mixture is then simmered until thick and glossy, resulting in a tangy and savory sauce that can transform any dish into a flavor explosion. Whether you are a fan of Indian cuisine or looking for a new way to spice up your meals, Spiced Plum Chutney is worth a try.

Instructions

1.Wash the plums and apple, peel and core the apple, then chop everything finely.
2.Finely chop the onion and garlic.
3.In a large saucepan, combine the plums, apple, onion, garlic, and 1 and 1/4 cups of vinegar. Bring to a boil over medium-high heat, then reduce heat and let simmer gently for about 10 minutes.
4.Add the mixed spice, curry powder, ginger, cinnamon, sultanas, and brown sugar to the pan. Stir to combine and let simmer for another 35-45 minutes, or until the mixture thickens and becomes shiny. Stir occasionally.
5.In a separate small saucepan, bring the remaining 1 and 1/4 cups vinegar to a boil.
6.When the chutney is cooked, add the boiling vinegar to it and stir well.
7.Add salt, black pepper, and cayenne pepper according to your taste. Let cool, then transfer to sterilized jars and store in a cool, dark place. It will keep for several months.
