Instructions

3.In a large bowl, beat the eggs, then add melted butter, buttermilk, lemon juice, mashed persimmons, granulated sugar, and salt.
4.Gradually mix in the dry ingredients, careful not to overmix.
5.Fold in chopped nuts if using.
6.Pour batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.
7.Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
