Ingredients

1 kg boneless pork loin
1 chicken , in individual pieces
5 ancho chilies
5 mulato chilies
hot water , enough to cover chiles and soak them in
1 kg tomatoes
50 g shelled pine nuts
1 banana
1 cooked zucchini
4 peeled pears , diced
2 peeled potatoes , diced
2 peeled and diced apples
2 garlic cloves
2 whole peppercorns
1 whole clove
1 cinnamon stick
2 tablespoons cooking oil
salt

Instructions

1.Soak the ancho chilies and mulato chilies in hot water until soft. Blend the softened chilies with a little of the soaking water until smooth.
2.Roast the tomatoes in the oven until the skins blister. Peel off the skins and blend with the pine nuts, banana, cooked zucchini, pears, potatoes, apples, garlic cloves, peppercorns, clove, and cinnamon stick. Add water as needed until smooth.
3.Heat the oil in a large pot over medium-high heat. Add the pork and chicken and cook until lightly browned on all sides. Remove from the pot.
4.In the same pot, add the blended tomato mixture and chili paste. Cook for a few minutes to combine the flavors.
5.Return the pork and chicken to the pot and add enough water to cover. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the meat is tender and falling off the bone. Add salt to taste.
