Ingredients

750 g kumara , peeled , roughly chopped
2 tablespoons raisins or 2 tablespoons sultanas
2 garlic cloves , crushed
1/2 teaspoon harissa or 1/2 teaspoon chili sauce
1 teaspoon ground cumin
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon caster sugar
1 -2 tablespoon red wine vinegar
1/2 teaspoon salt
60 ml olive oil , plus extra to drizzle
2 pita bread , large rounds ( lebanese flatbread )
1 teaspoon mild paprika or 1 teaspoon ground sumac
coriander leaves , to garnish

Instructions

1.Preheat oven to 200°C.
2.Boil kumara in a large pot of water until tender. Drain off the water.
3.In a food processor, blend the kumara, raisins or sultanas, garlic, harissa or chilli sauce, cumin, ginger, cinnamon, caster sugar, red wine vinegar, salt, and olive oil until it forms a smooth mixture.
4.Spread the mixture on the flatbread rounds.
5.Place the flatbread on baking paper and sprinkle with paprika or sumac.
6.Bake for 10 minutes until crisp. Cut into wedges and serve sprinkled with coriander leaves.
