Ingredients

1 teaspoon coriander seed
1 tablespoon cumin seed
1 tablespoon fresh rosemary , chopped

2 kg leg of lamb
sea salt

150 ml white wine vinegar
1 cup honey
2 cups dry white wine
1 kg overripe tomatoes , chopped
1 1/2 liters beef stock
1 teaspoon dried marjoram

Instructions

1.Preheat your oven to 160°C.
2.Put the coriander seeds into a pestle and mortar and pound until fine. Do the same with the cumin seeds.

8.Return the lamb to the pan. Add the honey, white wine, tomatoes, beef stock, and marjoram. Bring everything to a boil.
9.Cover the dish and transfer it to the oven. Cook for 3-4 hours, or until the lamb is cooked through and falling apart.
