Ingredients

125 g butter , chopped and slightly softened
3/4 cup brown sugar
1 egg
1/4 cup honey
1 1/4 cups self-raising flour
1 cup plain flour
3 teaspoons ground ginger
2 teaspoons mixed spice
1/4 teaspoon bicarbonate of soda
1/3 cup brown sugar
40 g butter
1 1/2 tablespoons milk
1/2 cup icing sugar
These Spiced Ginger & Caramel Bites are a delicious combination of sweet and spicy, perfect for indulging in on a lazy afternoon or as a dessert after dinner. The gingerbread biscuits are soft and chewy, full of warming spices and mild honey sweetness. The caramel icing adds an extra layer of decadence and sweetness, making these little bites irresistible. Instructions

1.Preheat oven to 180°C.
2.Beat the butter and sugar in a large bowl for 5 minutes or until pale and creamy. Add the egg and honey, one at a time, beating well after each addition.
3.Sift in the combined flours, ginger, mixed spice and bicarbonate of soda. Fold until a soft dough forms.
4.Roll level tablespoons into balls and place on lined baking trays, 3cm apart. Flat the balls slightly.
5.Bake for 12-15 minutes or until golden. Cool on the tray.
6.To make the caramel icing, stir brown sugar, butter and milk in a saucepan over medium heat until melted and combined. Bring to the boil and reduce heat to low. Simmer for 2 minutes.
7.Gradually mix in the sifted icing sugar with a wooden spoon or whisk until combined. Cool slightly.
8.Spread the caramel icing over the gingerbread biscuits and serve.
