6 tablespoons olive oil
6 cups chopped onions

1/4 cup fresh lemon juice
1 teaspoon ground cumin
3/4 teaspoon ground ginger
1/2 teaspoon sweet paprika
4 boneless skinless chicken breast halves
1 1/2 cups canned diced tomatoes , undrained
1/2 cup fat-free low-sodium chicken broth
1/4 cup fresh cilantro , chopped
1 package couscous , freshly cooked
Spiced Chicken Couscous with Cinnamon Onions is a healthy and delicious main course meal. This dish has a balance of spices that gives it a unique taste. Instructions

1.Heat 3 tablespoons of olive oil in a large skillet over medium heat. Add chopped onions and brown sugar. Stirring occasionally, cook until onions have caramelized for about 45 minutes.
2.In a small bowl, mix ground cinnamon, cumin, ginger, and sweet paprika. Rub chicken breast halves with spice mixture.
3.In the same skillet, heat remaining olive oil over medium-high heat. Add chicken breast halves and cook for about 5 minutes on each side. Mix in canned diced tomatoes and fat-free low-sodium chicken broth. Let it simmer for 12 minutes or until chicken is well-cooked.
4.Add fresh cilantro and lemon juice into the pan and stir until well combined.
5.Serve with freshly cooked couscous and sprinkle caramelized cinnamon onions on top of chicken.
