Ingredients

1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper
12 ounces boneless beef sirloin , thinly sliced and cut into 1/2-inch strips
2 tablespoons olive oil , divided
2 cups yellow onions , cut in thin lengthwise slivers
24 inches pita bread rounds
1/2 cup chimichurri sauce ( recipe follows )
2 cups loosely packed fresh flat leaf parsley , and tender stems
1/4 cup coarsely chopped onion
2 tablespoons extra-virgin olive oil
1/4 cup red wine vinegar
1 tablespoon fresh oregano leaves
4 garlic cloves
1/2 teaspoon cayenne pepper , to taste
1 pinch sugar
salt and pepper
Spiced Beef and Onion Pitas With Chimichurri Sauce are a very popular dish in many parts of the world, especially the Middle East. Instructions

1.In a small bowl, whisk together coriander, cumin, salt and pepper. Sprinkle mixture over beef strips, tossing to coat.
2.Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add beef and cook 3-4 minutes until no longer pink, stirring occasionally. Remove beef from skillet and cover with foil.
3.Wipe skillet clean with paper towel. Heat remaining 1 tablespoon olive oil in same skillet over medium-high heat. Add onions and sauté 5-6 minutes until browned and tender.
4.Warm pitas according to package directions.
5.To assemble: Cut off top 1/3 of each pita round. Fill bottom with beef strips, onions and a dollop of chimichurri sauce. Replace each pita top.
