250 g lamb fillets

1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup beef stock or 1/4 cup chicken stock
1/4 cup red wine , approx
1 potato , large
1 kumara , large
100 g feta , crumbled
1/4 cup milk
salt and pepper

Instructions

1.Preheat oven to 180°C/350°F.
2.Rub lamb fillets with cumin, smoked paprika, salt, and pepper evenly.
3.Heat a pan over medium-high heat and spray with olive oil cooking spray.
4.Sear lamb fillets on all sides until browned.
5.Transfer the lamb fillets to a baking dish.
6.Combine beef stock and red wine in a small mixing bowl.
7.Pour the liquid over lamb fillets.
8.Bake lamb fillets in preheated oven for 10-15 minutes or until desired level of doneness is reached.
9.Meanwhile, peel and cut potato and kumara into cubes.
10.Boil the potato and kumara cubes until tender.
11.Meanwhile, crumble feta and heat milk in a small saucepan.
12.Mash the boiled potato and kumara with feta and warm milk until smooth.
13.Add salt and pepper to taste.
