2 lbs eggplants , sliced
1 lbs tomatoes , peeled , seeded and mashed or can tomato puree
1 medium onion , chopped
1 teaspoon paprika
1 teaspoon sugar
1 lb country sausage , sliced thin
1 lb green bell pepper , cut in strips
olive oil
1/4 cup rose wine
salt and pepper
instant mashed potatoes or flour ( optional )
snipped parsley

Instructions

1.In a large skillet, heat some olive oil over medium-high heat.
2.Add the eggplants and cook until browned, about 5 minutes. Remove from the skillet and set aside.
3.Add more oil to the skillet and then add the sausage pieces. Cook until browned, stirring occasionally.
4.Add the chopped onion and cook until softened.
5.Add the green bell pepper strips, the mashed tomatoes or tomato puree, paprika, sugar, salt, and pepper. Stir to combine and bring to a simmer.
6.Add the rose wine and cover the skillet, cooking for 10-15 minutes until sausage is cooked through and sauce has thickened.
7.Serve hot with a sprinkle of snipped parsley on top.
