Ingredients

200 ml warm water
2 tablespoons olive oil

380 g whole wheat spelt flour
2 1/2 teaspoons instant yeast

240 g canned tomatoes , chopped
1/4 teaspoon sea salt

100 g prosciutto , thinly sliced ( or smoked ham )
50 g pancetta , thinly sliced
400 g button mushrooms , thinly sliced
150 g gouda cheese , coarsely grated ( or mozzarella )

Instructions

1.In a large bowl, mix together warm water, olive oil, sugar and salt.
2.Add whole wheat spelt flour and instant yeast, and mix until the dough forms.
3.Knead the dough for 5-10 minutes, until it forms a smooth, elastic ball.
4.Place the dough in a clean, oiled bowl, and cover it with a damp cloth. Let it rise for 1-2 hours, until it doubles in size.
5.Meanwhile, in a separate pan, sauté sliced garlic in olive oil until fragrant.
6.Add chopped canned tomatoes, salt, pepper and oregano. Cook for 5-10 minutes, until the sauce thickens. Set aside.
7.Preheat the oven to 220°C.
8.Roll out the pizza dough on a clean, floured surface. Transfer to a pizza stone or baking sheet.
9.Spread tomato sauce evenly over the dough, leaving a small border at the edge.
10.Layer thinly sliced prosciutto and pancetta over the sauce.
11.Add button mushrooms and sprinkle grated cheese on top.
12.Bake in the oven for 10-15 minutes, until the crust is golden-brown and the cheese is melted.
