Ingredients

250 ml milk
200 ml cream
2 packets vanilla sugar
3 eggs
80 g sugar
25 g powdered sugar
10 g gelatin
80 g speculaas or 80 g gingerbread cookies

Instructions

1.Firstly, pour the milk and cream into a saucepan and add the vanilla sugar.
2.Heat the mixture slowly over medium heat, stirring constantly until the sugar is dissolved.
3.In a separate bowl, whisk together the eggs and sugar until they are light and frothy, then stir in the speculaas or gingerbread cookies.
4.Slowly pour the hot milk mixture into the egg mixture, whisking constantly, until everything is well combined.
5.Rinse out the saucepan and pour the combined mixture back into it.
6.Add the powdered sugar and heat the mixture over low heat, stirring constantly, until it thickens and coats the back of a spoon.
7.In a small bowl, mix the gelatin with a tablespoon of water and add it to the pan, stirring until dissolved.
