Speculoos (or Speculaas) are traditional spiced cookies that originated in the Netherlands and Belgium, but are now enjoyed throughout the world. These cookies are a holiday classic and are often made during the festive season, but they are equally delicious and comforting any time of the year. Named after the Latin word for mirror, Speculoos cookies are flat and have a shiny, reflective surface due to the caramelization of the sugars during baking. They are typically flavored with a blend of cinnamon, ginger, nutmeg, allspice, and cloves, which gives them their characteristic warm and fragrant aroma. The cookies are enjoyed with a cup of tea or coffee and are a true delight for the senses.

Instructions

.In a medium-sized mixing bowl, whisk together the flour, cinnamon, ginger, nutmeg, allspice, cloves, salt, baking soda, and baking powder.
.In a separate large mixing bowl, beat the butter, white sugar, light brown sugar, and vanilla extract until light and fluffy.
.Gradually fold in the flour mixture until just combined.
.Turn the dough out onto plastic wrap and shape into a disc. Chill for at least 2 hours.
.Preheat the oven to 350 degrees F.
.Roll the dough out to 1/4 inch thickness, cut into desired shapes using cookie cutters, and place on a lined baking sheet.
.Bake for 8-10 minutes or until golden brown around the edges.
.Cool the cookies on a wire rack before serving or storing.
