Ingredients

200 g self raising flour
125 g soft brown sugar
2 tablespoons allspice
1 pinch salt
150 g chilled butter
1 tablespoon milk
Speculaas is a traditional Dutch biscuit, typically enjoyed in the lead up to Christmas. However, these biscuits are delicious all year round and can be decorated according to different seasons or occasions. The spiced flavour comes from the use of allspice, which is a key ingredient in these biscuits. The texture of Speculaas is slightly crumbly and the biscuits are perfect for dunking in a hot cup of tea or coffee.

Instructions

1.In a large mixing bowl, combine the self raising flour, sugar, allspice, and salt.
2.Add the chilled butter and mix together until the mixture resembles coarse crumbs.
3.Add the milk and mix until the dough comes together.
4.Wrap the dough in cling film and refrigerate for at least one hour.
5.Preheat the oven to 180°C (160°C fan)/350°F/gas mark 4.
6.Roll out the dough on a lightly floured surface to approximately 1/2 cm thickness.
7.Cut the dough into the desired biscuit shapes, using a cookie cutter or knife.
8.Place the biscuit shapes onto a lined baking tray.
9.Bake in the preheated oven for 15-20 minutes, or until the biscuits are lightly golden.
10.Allow the biscuits to cool on the baking tray for 5 minutes, before transferring them to a wire rack to cool completely.
