Ingredients

2 cups all-purpose flour
5 eggs
1/2 teaspoon salt
1/4 teaspoon nutmeg , grated
5 scallions , chopped
3 -4 celery ribs , petite diced
2 -3 carrots , petite diced
1 medium Granny Smith apples , peeled and petite diced
1 medium red bell pepper , petite diced
3/4 cup mayonnaise
2 tablespoons good German mustard , e.g . Lowensenf
1 tablespoon fresh dill weed , chopped ( use less if dried )
1 tablespoon cider vinegar
1 tablespoon olive oil
1/4 teaspoon cayenne pepper
1 -2 gherkin , chopped ( optional )
1/4 cup parsley , chopped ( optional )
Spätzle is a traditional German egg noodle that's typically served as a side dish. In this recipe, we're using Spätzle as the base for a delicious summer salad. The Spätzle is cooked until chewy and tender, then tossed with a colorful mix of vegetables and a tangy mustard dressing. The result is a refreshing and flavorful salad that's perfect for picnics, barbecues, or any summer gathering. Feel free to add or substitute different veggies to make it your own.

Instructions

1.In a large pot, bring salted water to a boil.
2.In a mixing bowl, whisk together flour, eggs, 1/2 teaspoon salt, and nutmeg to make a thick dough.
3.Using a Spätzle maker or spatula and knife, press the dough through the holes of the Spätzle maker/dough scraper into the boiling water. Cook for 2-3 minutes or until the Spätzle floats to the top of the water. Drain and cool.
4.In a large mixing bowl, add the cooled Spätzle, chopped scallions, petite diced celery, petite diced carrots, peeled and petite diced Granny Smith apples, petite diced red bell pepper, and chopped gherkins if using.
5.In a separate bowl, whisk together mayonnaise, German mustard, chopped dill weed, cider vinegar, olive oil, cayenne pepper, and salt to taste. Pour the dressing over the salad and toss to coat evenly.
6.Chill the salad for at least an hour before serving. Sprinkle with chopped parsley if desired.
