Ingredients

2 1/2 cups water
1 1/2 cups granulated white sugar
1/4 cup dried lavender ( or 1/2 cup of fresh lavender )
1 vanilla bean , split lengthwise and scraped
1 -2 tablespoon lavender simple syrup , to taste
8 ounces chilled champagne ( or sparkling wine )
fresh lavender , to decorate

Instructions

1.In a large saucepan, combine water, sugar, dried or fresh lavender, and vanilla bean. Stir well and bring to boil over medium-high heat.

3.Remove from heat and strain the mixture through a fine mesh strainer or cheesecloth to remove the lavender and vanilla bean.
4.Allow the lavender simple syrup to cool completely.
5.In a champagne glass, add 1-2 tablespoons of lavender simple syrup and top with chilled champagne or sparkling wine.
6.Garnish with a fresh sprig of lavender before serving.
