3 tablespoons olive oil
1 large onion , chopped
1 bunch green onion , chopped
2 garlic cloves , minced
2 lbs spinach , rinsed and chopped
1/2 cup fresh parsley , chopped
2 eggs , lightly beaten
1/2 cup ricotta cheese
1 cup feta cheese , crumbled
8 sheets phyllo dough
1/4 cup olive oil

Instructions

1.Preheat your oven to 375°F (190°C).
2.In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the chopped onion, green onion, and minced garlic to the skillet, and sauté for 5 minutes until softened.
3.Add the chopped spinach to the skillet, and continue to cook for another 5 minutes.
4.Remove the skillet from the heat and let cool for a few minutes. Stir in the parsley, beaten eggs, ricotta cheese, and crumbled feta cheese until well combined.
5.In a separate small bowl, mix together the remaining 1/4 cup of olive oil with a little water to create a brushing oil mixture.
6.Brush a 9x13 inch baking dish with some of the oil mixture. Layer 4 sheets of the phyllo dough in the baking dish, brushing each sheet with some of the oil mixture.
7.Spread the spinach mixture over the phyllo sheets in the baking dish, and top with 4 more sheets of phyllo dough, again brushing each sheet with some of the oil mixture.
8.Brush the top sheet of phyllo with the remaining oil mixture.
9.Bake the Spanokopita in the preheated oven for 35-40 minutes, or until the top is golden brown and crispy.
