6 large eggs

2 -3 teaspoons piri-piri
2 tablespoons olive oil , for cooking eggs
2 piquillo peppers , roasted and quartered lengthwise or 2 roasted red peppers , quartered lengthwise

Instructions

1.In a small bowl, whisk together olive oil, lemon juice, and Piri-Piri spice mix to make the sauce.

3.Heat 1 tablespoon of olive oil in a large skillet over medium heat.
4.Add onions and sauté until soft and translucent, about 5-7 minutes.

6.Add the egg mixture to the skillet and stir to combine everything evenly.
