2 red onions , cut into quarters
1 chorizo sausage , sliced
1 red capsicum , seeds removed and sliced
1 yellow capsicum , seeds removed and sliced
3 garlic cloves , crushed
2 tablespoons oil
1/2 tablespoon dried oregano
400 g diced tomatoes ( with liquid )
12 green olives

Instructions

1.Preheat oven to 220°C (425°F).
2.In a large baking dish, toss the halved baby potatoes with 1 tablespoon of oil, paprika, and oregano. Bake for 20 minutes or until potatoes are starting to brown and cook through.
3.In a bowl, combine the chicken drumsticks with the remaining tablespoon of oil and mix well. Add the chicken drumsticks to the same baking dish, potatoes will need to be pushed to one side. Scatter the quartered red onions, sliced red and yellow capsicum, sliced chorizo, and crushed garlic over the chicken. Return to the oven and bake for another 25 minutes or until the chicken is cooked through.
4.Once done, add diced tomatoes with liquid and mix well. Scatter the green olives and cook for another 5 minutes.
5.Remove from the oven and serve hot with crusty bread.
