3/4 cup aged sherry wine vinegar

2 teaspoons kosher salt

4 New York strip steaks or ( 12 ounce ) filet mignon

Instructions

1.Preheat oven to 375°F (190°C).

3.In another bowl, whisk the Spanish paprika, ancho chile powder, mustard seeds, fennel seed, kosher salt, and black pepper until well combined. Rub the spice mixture on the New York strip steaks or filet mignon.
4.Heat oil in a cast-iron skillet over high heat until it shimmers. Add the steaks and sear until brown on all sides.
5.Transfer the cast-iron skillet to the oven and cook steaks for 5-8 minutes, depending on the thickness of the steak and your preferred level of doneness.
6.Let the steaks rest for 5 minutes before slicing and serving with the steak sauce.
