Ingredients

1 ounce short-grained Spanish rice ( such as Bomba or Calasparra )
2 -3 tablespoons olive oil
4 large red peppers
1 small red pepper , chopped
1/2 onion , chopped
1/2 tomatoes , skinned and chopped
3 ounces salt cod fish
saffron
chopped fresh parsley
salt

Instructions

1.Preheat the oven to 350°F.
2.Cook the rice according to the package instructions.
3.Cut off the tops of the large peppers and remove the seeds and white ribs from the inside. Reserve the tops.
4.Heat the olive oil in a large skillet over medium heat.
5.Add the chopped small pepper and onion and sauté until tender.
6.Add the chopped tomato and cook for a few more minutes.
7.Stir in the cooked rice and salt cod fish.
8.Add saffron and some chopped fresh parsley to taste. Mix well.
9.Stuff the peppers with the rice mixture and cover with their tops.
10.Place the stuffed peppers in a baking dish and bake for 40-45 minutes, until the peppers are softened and the filling is heated through.
