Ingredients

2 boxes spanish rice Rice-A-Roni
4 tablespoons butter
4 cups water
2 cans diced tomatoes
1 - 1 1/2 lb ground beef
1 diced onion
1/2 cup diced bell pepper
2 cans corn ( drained )
8 ounces shredded cheddar cheese or 8 ounces Mexican blend cheese
1 teaspoon luzianne cajun seasoning or 1 teaspoon similar mixed spice
2 -3 dashes lousiana style hot sauce

Instructions

1.Preheat oven to 375F
2.In a large skillet, cook ground beef, onion, and diced bell pepper over medium heat until beef is browned and vegetables are tender.
3.Drain off fat.
4.Add the water, Rice-A-Roni, diced tomatoes, corn, cajun seasoning, and hot sauce to the skillet. Bring to a boil. Reduce heat to low, cover, and simmer for about 22 minutes or until the Rice-A-Roni is cooked and most of the liquid has been absorbed.
5.Stir in 1 cup of cheese.
6.Transfer the mixture to a greased 13x9 inch baking dish. Sprinkle the remaining cheese on top.
7.Cover with foil and bake for 20 minutes.
8.Remove the foil and bake for an additional 5-10 minutes or until the cheese is melted and bubbly.
