Ingredients

6 slices bacon , cut into 1 inch peaces
1 medium onion , diced
1 medium potato , cut into 1/2 inch pieces
6 eggs
3/4 teaspoon salt
1/3 teaspoon pepper

Instructions

1.Heat a non-stick frying pan over medium-high heat.

3.Add the onion and potato to the same pan and cook for about 10 minutes or until potatoes are tender.
4.In a bowl, beat the eggs, salt, pepper and parsley together.
5.Add the bacon to the pan and then add the beaten eggs to the pan.
6.Cook for 4-5 minutes or until the mixture is almost cooked through.
7.Use a large plate to cover the pan and flip the omelet over onto the plate.
8.Slide the omelet back into the pan so that the other side can cook for 2-3 minutes.
9.Slide the omelet out of the pan onto a serving plate and cut into slices to serve.
