Ingredients

12 small fresh clams in shell
12 medium fresh shrimp , in shells
8 ounces chorizo sausage ( or other garlic-seasoned sausage )
2 tablespoons olives ( or cooking oil )
2 1/2 lbs chicken , cut into 8 serving pieces
2 cans chicken broth ( about 4 cups )
1 medium onion , cut into wedges
1 sweet red pepper , cleaned out and cut into strips ( or green pepper )
1/2 teaspoon garlic , minced
2 cups white rice , uncooked
1/2 teaspoon oregano
1/4 teaspoon saffron
1/2 cup fresh peas ( or 1/2 of a 10 oz pkg frozen peas )
Paella is a traditional Spanish dish, originating in Valencia and is now enjoyed worldwide. Each region of Spain puts its own twist on the recipe which very often includes seafood, meats, vegetables and saffron rice. In this Madrid variation of the classic, the meats used include chicken and sausage. This recipe has been passed down through generations and is enjoyed as a communal dish.

Instructions

1.Heat the oil in a large skillet over medium-high heat. Add the clams and shrimp, cover, and cook until the shells start to open. Remove from pan and set aside.
2.Add the sausage to the same skillet. Cook until browned. Remove from pan and set aside.
3.Add chicken to the same skillet, cook over medium heat until browned. Remove from pan and set aside.
4.Add onion, garlic and pepper to the pan, sauté until the vegetables have softened. Be sure to stir in the uncooked rice and peas, and mix well.
5.Add the chicken broth, stirring again to mix well. Cover the pan and cook over medium heat for about 20 minutes or until the rice is tender. Add more broth if necessary.
6.Return the clams, shrimp, sausage, and chicken to the pan. Stir well to combine, and heat throughly before serving.
