Ingredients

450 g peeled potatoes
2 large onions , sliced
8 eggs
2 tablespoons olive oil
2 tablespoons chopped fresh parsley
salt and pepper

Instructions

1.Peel the potatoes and slice them thinly. Do the same with the onions.
2.Heat the olive oil in a 25cm non-stick frying pan over medium heat. Add the sliced onions and fry for 10 minutes until soft and lightly golden.
3.Add the sliced potatoes and continue to fry for another 5-10 minutes, stirring occasionally, until the potatoes are cooked and golden.
4.In a large bowl, beat the eggs together with a pinch of salt and pepper.
5.Add the fried potatoes and onions to the beaten eggs and mix well.
6.Clean the frying pan with some kitchen paper and return it to the heat, adding a little more olive oil if needed.
7.Pour the egg and potato mixture into the frying pan and cook over low heat for 10-15 minutes, or until the bottom and edges are set but the top is still slightly runny.
8.Flip the omelette over by sliding it onto a plate, and then inverting the plate back into the frying pan. Cook for another 5-10 minutes until both sides are lightly browned and the omelette is cooked through.
9.Sprinkle with chopped fresh parsley before serving, cut into wedges.
