120 g unsalted butter , softened at room temperature

30 ml olive oil
100 g tomatoes , peeled
5 g fresh basil , chopped
5 g fresh oregano , chopped
480 g spanish mackerel , filleted
30 ml olive oil
1/4 lemon , juice of

Instructions

1.Preheat oven to 200C / 390F.
2.To make almond caper butter, place butter, capers, almonds, lemon juice, and parsley into a food processor.
3.Blitz until smooth then set aside.
4.In a mixing bowl, toss eggplant, zucchini, and bell peppers with garlic, onions, mushrooms, 30 ml olive oil, salt, basil, and oregano.
5.Spread vegetable mixture evenly over a baking tray.
6.Add tomatoes to the mix and seasoning to taste.
7.Bake for 20-25 minutes, or until cooked through.
8.Meanwhile, rub mackerel fillets with olive oil, lemon juice, and salt.
9.Add fillets to the oven and cook for 10 minutes, or until cooked through.
