4 -5 cloves garlic , chopped
2 tablespoons ground cumin
1 tablespoon chili powder
2 bay leaves
1/4 cup cilantro , chopped
dry sherry ( optional )

Instructions

1.Drain and rinse 3 cans of black beans.
2.In a large pot, heat 2 tablespoons of olive oil over medium heat.
3.Add the chopped onion and garlic, and cook until the onion is translucent.
4.Add the cumin and chili powder and stir to combine. Cook for another minute.
5.Add the drained and rinsed black beans, along with the remaining can of un-drained beans, bay leaves, and enough water to cover the mixture. Bring to a boil.
6.Reduce heat and let simmer for 20 to 30 minutes, stirring occasionally.
7.Remove the bay leaves and stir in the chopped cilantro.
8.Use an immersion blender to blend the soup until it reaches your desired consistency. Be careful not to over-blend.
9.If using, stir in a splash of dry sherry.
10.Season with salt and pepper, to taste.
11.Serve hot and enjoy!
