5 ounces raw almonds , well peeled ( not toasted )
2 big garlic cloves , peeled
2 tablespoons red wine vinegar
2/3 cup refined olive oil
1/2 tablespoon salt ( to taste )
7 ounces grapes , peeled
1/2 lb French bread
The Spanish Ajo Blanco is a cold soup from Andalusia, Spain. Instructions

1.Soak the bread slices in cold water until completely softened (around 10-15 minutes)
2.In a blender, add the peeled almonds, garlic cloves, red wine vinegar, and salt. Blend until smooth.
3.Add the soaked bread slices, peeled grapes, and olive oil. Blend again until everything is well combined. If the mixture is too thick, gradually add some cold water while blending until you achieve a creamy consistency.
4.Serve chilled, garnished with some grapes, a drizzle of olive oil, and some croutons if desired.
