Instructions

.Heat the olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until the onion is translucent.
.Add the spinach to the skillet, and season with salt and pepper. Cook until the spinach has wilted, stirring occasionally.
.Turn off the heat, and let the spinach cool for 5-10 minutes.
.In a bowl, crumble the feta cheese and add the parsley, mint, and nutmeg. Mix well.
.Beat the egg in a small bowl, and add it to the cheese mixture.
.Add the lemon juice to the cheese mixture and stir well.
.Preheat the oven to 375°F.
.On a clean surface, lay out a phyllo sheet and brush it with melted butter. Add another sheet on top of it and brush it with butter, too. Repeat until you have 4 sheet layers.
.Cut the phyllo sheets lengthwise to form 3 long strips. Add a spoonful of the cheese mixture to the bottom edge of each strip. Fold the corner over the mixture to make a triangle. Continue folding the triangle down the strip, as if you were folding a flag. Brush the finished triangle with melted butter. Repeat with remaining phyllo and filling.
.Place the triangles on a baking sheet, brush them with butter, and bake for 20-25 minutes, or until golden brown.
