1/2 cup very finely chopped onion
2 large eggs
3/4 lb feta cheese , drained and crumbled
1/2 cup very finely chopped parsley
1 teaspoon dill weed or 2 tablespoons chopped fresh dill
3 packages frozen chopped spinach , thawed and squeezed dry
1 package phyllo dough
1 lb butter , melted

Instructions

1.Heat olive oil in a frying pan. Add garlic and onion, and sauté until translucent for about 2-3 minutes. Set aside to cool.
2.In a large mixing bowl, whisk the 2 eggs. Add feta cheese, parsley, dill, and spinach. Mix until well combined.
3.Add the cooled onion and garlic to the bowl. Mix well.
4.Preheat the oven to 375°F (190°C).
5.Melt butter in a small saucepan or in the microwave.
6.Unroll phyllo dough and cover with a damp towel to prevent it from drying out. Brush each sheet with melted butter, being careful not to tear it.
7.Cut the phyllo dough into 3-inch (7 cm) wide strips. Place 1 tablespoon of the spinach mixture onto one end of a strip. Fold the end diagonally to form a triangle. Fold it over again, in the opposite direction. Continue until you reach the end of the strip.
8.Place the triangles on a greased baking sheet. Brush each one lightly with butter.
9.Bake for 12-15 minutes or until golden brown.
10.Serve immediately and enjoy!
