Ingredients

1 lb phyllo dough
1 box frozen spinach
6 -8 ounces feta cheese ( small container )
16 ounces cottage cheese
1/2 cup parmesan cheese
melted margarine ( about 1 1/2 sticks )
3 tablespoons fresh parsley
1 cup chopped onion
2 1/2 tablespoons olive oil
3 eggs
1 dash salt and pepper

Instructions

1.Preheat oven to 350°F.

5.In a bowl mix cottage cheese, feta cheese, eggs, parmesan cheese, fresh parsley, and salt and pepper.
6.Add spinach and mix well.
7.Cut phyllo dough into squares of your choice size.
8.Brush with melted margarine and stack 2-3 layers of phyllo dough in each muffin cup.
9.Fill each cup with 1-2 spoonful(s) of spinach and cheese mixture.
10.Top with another layer of phyllo dough that has been brushed with margarine.
11.Bake in preheated oven for 25-30 minutes until golden brown and crispy.
