Ingredients

3 bags fresh spinach , chopped ( remove the long stems )
3 tablespoons butter ( or use olive oil )
1 large onion , finely chopped
2 green onions , chopped
2 tablespoons minced fresh garlic ( or to taste )
1/4 cup fresh parsley , finely chopped
3 large eggs , lightly beaten
3/4 cup ricotta cheese ( I use the full-fat ricotta cheese )
1 cup feta cheese , crumbled
salt and black pepper ( I use seasoned salt in place of the white salt )
8 ounces phyllo dough , thawed
1/4 cup melted butter ( you might need a bit more )
Spanakopita is a traditional Greek dish that has become increasingly popular worldwide. It consists of a savory filling of spinach and cheese enclosed in flaky phyllo pastry. Instructions

1.Preheat the oven to 375°F.
2.In a large skillet, melt the butter over medium-high heat.
3.Add the onion, green onions, and garlic to the skillet. Saute until the onions are translucent.
4.Add the chopped spinach and parsley to the skillet. Saute until the spinach is wilted.
5.In a mixing bowl, beat the eggs and then add ricotta and feta cheese. Mix well.
6.Add the spinach mixture to the cheese mixture. Combine thoroughly.
7.Season with salt, pepper, and seasoned salt as per your taste.
8.Grease a baking dish with melted butter. Unroll the phyllo dough sheets and cover them with a damp cloth.
9.Place 1 sheet of phyllo dough in the dish, brush with melted butter, and repeat until 5 layers are formed.
10.Spread the spinach mixture over the phyllo layers, then top with the remaining phyllo dough. Brush with melted butter between each layer.
11.Using a sharp knife, cut the pie into squares or triangles. There is no need to remove the excess phyllo dough.
12.Bake for 35-40 minutes or until golden brown.
