Ingredients

16 ounces frozen spinach , thawed and squeezed dry
1 tablespoon olive oil
1/2 cup onion , diced
1 egg , lightly beaten
2 tablespoons fresh dill , minced
1/8 teaspoon salt

1/2 cup feta , crumbled
1/4 teaspoon black pepper

5 ciabatta buns , focaccia sliced
2 large tomatoes

3 tablespoons feta , crumbled

Instructions

1.Preheat oven to 375°F.
2.In a large skillet, heat olive oil over medium-high heat. Add diced onion and cook until softened, about 5 minutes.

4.Remove skillet from heat and stir in the egg, fresh dill, lemon juice, feta, salt, black pepper, and cayenne pepper.
5.Cut ciabatta buns horizontally and fill each bun with spinach leaves, sliced tomato, and the spinach mixture. Sprinkle with crumbled feta.
6.Cover each sandwich with the top of the bun and toast in the oven for 7-10 minutes until cheese is melted and bread is crispy.
