Ingredients

1 spaghetti squash
1 cup onion , chopped
2 garlic cloves , crushed
2 medium fresh tomatoes
1/2 lb mushroom , sliced
salt & pepper
1 cup cottage cheese or 1 cup ricotta cheese
1 cup mozzarella cheese , grated
1/4 cup parsley , chopped
1 teaspoon basil
1 dash thyme
1 cup fine breadcrumbs
butter ( for saute )
parmesan cheese
This Spaghetti Squash, Tomato, Mushroom & Cheese Casserole is a delicious and easy way to enjoy all the flavors of a comforting pasta dish without the added calories. Instructions

1.Preheat oven to 375°F.
2.Cut the spaghetti squash in half lengthwise, remove the seeds, and place it cut-side down in a baking dish.
3.Add water to the baking dish and bake in preheated oven for 45 minutes.
4.In a pan, saute the onions and garlic in butter until soft.
5.Add the mushrooms and tomatoes, salt, pepper, basil, and thyme and saute until the vegetables are soft.
6.Remove the spaghetti squash from the oven, and using a fork, scrape all the flesh out into the pan with the vegetables and mix well.
7.Pour the mixture into an 8x8 inch baking dish.
8.Mix together cottage cheese and half of the mozzarella and spread over the top of the squash mixture.
9.Mix together breadcrumbs, remaining mozzarella, parmesan, and parsley and sprinkle it evenly over the top of the cheese.
10.Bake in preheated oven for 25-30 minutes, until browned and bubbly.
